Wild Berry Recipes

Wild Berry Stuffing:  Mix 1 cup of Wild Berry sauce with 8 ounces of dark dried fruit to make a stuffing for duck pork or venison loin.

Wild Berry Reduction:  Add ½ cup of red wine, and ½ cup of beef stock in a small sauce pan and reduce by about ½.  Add 1 cup of Wild Berry Sauce , stir in 3-4 tablespoons of butter and let simmer a few minutes.  Serve over lamb, beef or veal.

Wild Berry Balsamic Reduction:  Add ½ cup of balsamic vinegar to a small sauce pan and reduce by half.  Stir in 1 cup of Wild Berry Sauce and simmer a few minutes.  Use on beef, lamb pork or game.

Wild Berry Salmon:  Season a salmon filet with sea salt.  Thinly slice fresh lemon and place over salmon filet.  Bake salmon until done to taste.  Drizzle with Wild Berry Sauce, and heat for another 3-4 minutes.

Wild Berry Vinaigrette:  In a blender, combine 1 cup olive oil, ½ cup Wild Berry Sauce, ½ cup balsamic vinegar, 1 tablespoon Dijon Vinegar, salt and fresh cracked pepper.  Blend until emulsified.  Drizzle over fresh spring greens, feta cheese, dried cherries, and toasted pistachio nuts.

Wild Berry Drizzle:  Drizzle Wild Berry Sauce over ice cream, fresh baked scones, flourless chocolate cake or cheese cake.
